Healthy Gluten Free Pancakes
These pancakes are so easy to make. You just need a food processor, blender or whisk to make them. These pancakes do not require you to stand over the hob frying pancakes in batches, you can put them on greaseproof paper and pop them into the oven to go and finish other jobs for 15-20 mins until they are ready!
Here's the ingredients you'll need:
2 organic free range eggs (3 if small eggs);
2 ripe bananas;
2tbsp organic grass fed butter or coconut oil;
25g coconut flour;
1/2 tsp gluten free baking powder;
1/2 tsp gluten free bicarbonate of soda;
Pinch Himalayan/Celtic sea salt.
Optional: organic sultanas pre soaked in boiling water, drained, and stirred in after the blending process.
Method:
Preheat oven to 180 degrees Celsius and lime a baking tray with greaseproof paper;
Put all wet ingredients into food processor or blender and blend until smooth;
Add dry ingredients, blend well until smooth;
Using a spatula, put mixture into small circles, like miniature pancakes, on the lined baking tray. My mixture usually makes 8 small pancakes.
Put into the oven for 15-20 mins. This varies. You want the pancakes to be cooked and golden on top.
Add your choice of toppings:
My favourite - free range/preservative free bacon with organic maple syrup.
Blueberries heated in a saucepan with coconut oil until it forms a compote.
Coconut yogurt with berries.
Tip: Serve the pancakes upside down so that you get nice flat surface.
